The new restaurant will be an extension of Aspen Creek Grill, a regional restaurant chain that currently has eight locations across Texas, Kentucky and Indiana. But out of all the items, Rehberg said the wings are what they want to be known for, which may be an issue due to the current nationwide chicken wing shortage. Currently, the restaurant offers a wing special on Tuesdays that Rehberg said they are willing to take a loss on in order to offer items at an affordable price. The next morning, we scored brunch reservations at the hotel’s gem, Finch & Fork, serving up some of California’s best bites. With a vibe that’s vibrant but not overwhelming, it strikes the perfect balance between spacious and cozy.

The menu will also offer similar Americanized made-from-scratch offerings with items such as hand-cut steaks, salads and burgers. After losing a year of events due to the coronavirus pandemic, the Downtown Dining Association of South Bend is restarting its Wednesday Wine Walks this summer. The space has been renovated to encapsulate the Rocky Mountain and Colorado theme with mountain bikes, Adirondack chairs and a ski lift. Sports is also a focus, with 42 televisions dispersed in the building so that every seat has sight to multiple screens.
There will be wine and hard seltzer on tap along with a full bar with cocktails and even fruit purees made from tapped hard seltzers. In just 48 hours, Santa Barbara swept us off our feet, leaving us craving more. Despite the time crunch, those moments of relaxation were pure bliss. The restaurant is slated to be family-friendly and Rehberg said he anticipates only about 25% of sales will be alcohol related so it won’t be like a bar. Like Scotty’s, the restaurant will be filled with televisions for sports viewing. In July 2019, the restaurant suddenly closed its doors as corporate owners of the restaurant chain, Scotty’s Holdings LLC, filed for Chapter 11 bankruptcy in December 2018. Main Street, one the busiest retail corridors in the area, has been empty. “We saw the opportunity with this building and, combining what we knew about the concept … we just thought it would be a great market for us as well as a great opportunity with the Scotty’s property,” Rehberg said.

As happy hour rolled in, we found ourselves in need of a good drink. Knowing my travel buddy’s history with Hillstone Restaurant Group, we couldn’t resist swinging by the Honor Bar in Montecito for a cocktail. With its striking resemblance to the White House Tavern back in Aspen, it felt like a slice of home on the California coast. Familiarity has its perks, especially when you’re hundreds of miles away. Once we settled into our balcony suite, the ocean was calling, and we wasted no time heading straight for the beach. Longing for that saltwater breeze, we took a quick stroll along the shore, then made a beeline for the Boathouse at Hendry’s Beach.
With a smaller footprint than an average Aspen Creek Grill, the Aspen Tap House will have a slightly smaller menu and a stronger focus on craft beer. Ten restaurants and bars are planning to participate for the inaugural day, with more possibly to be added for future dates on July 14 and August 11. Other issues also have come up during opening plans. Operators initially planned to open the Mishawaka restaurant by February, but, Rehberg said, delays were caused by shipping issues with items like booths, tables and other necessary construction supplies. However, the current staffing shortage was not an impact on the delayed opening, with market partner Derek Templeton saying the business is about 75% to 80% fully staffed.
